Da Re is backed by the expertise and ancient artisan traditions on bread production, which have been handed down over many generations.
Since its inception, it has registered continuous growth and was totally restructured in the seventies. The quality and quantity of the artisan bread it produced and the artisan features of its bread products made it renowned as one of the leading Italian bakeries, specially in the north-eastern Italy.
Da Re purposely chose not to turn its bread production plants into totally automated processes as it was convinced that although “industrialized” Italian bakeries produced enormous quantities, the bread would never be fragrant and appetizing because these features can only be achieved with a processing method carried out according to the best artisan bread-making traditions. And those traditions entailed carrying out manually at least some of the many stages of production. This is why – notwithstanding the great daily quantities of bread it produced and its constant growth – the company always continued to carry out the essential artisan bread-making stages according to the strictest and consolidated customs of the baker's art. This corporate philosophy made the Da Re's bread products become known as the byword for premium quality.
The company however was faced with certain problems such as distributing the bread to a great number of baker's shops and other points of sale, night-time works shifts, and the very difficult task of finding qualified employees that were willing to work these shifts. At this point it was evident that it needed to study, to discover, or in some way to “invent”, a radically new bread production of great originality – a bit like bread and a bit like breadsticks – that could maintain the typical features of fragrance, freshness and wholesome taste of the handmade bread of times gone by. And to offer these features the new product necessarily had to be produced according to the best artisan bread-making traditions.
